Mostly because of their advanced social structure
both actually have a really rich culture, hell elephants build grave yards and visit the dead on their trips, and stop and bring offerings and mourn the dead, and TEACH the younglings too
though some things like Chimps, mainly the pigmi chimps are brilliant, they are too much like us, and even have semi fenerals for the dead,, however they have criminals, and gangs, and all the negatives that we have, so that takes them out of the running

I shall say Eagle, although Adena, the social structure and advanced intellectual formalities provide them as the obvious choice, it just don't cut it for me. When you say noble its more spiritual for me than it is an intellectual choice.
The Eagle represents liberty and justice, its nobility providing it the proud mannerisms needed to fit the bill. The way it flies above the ground looking down upon the world below. For me thats nobility.
