I notice a lot in Revenge of the Sith the General Grievious is coughing a lot or choking. Why? Its kinda dumb because in the movie it never explains why.

It is. Mace Windu crushed in the metal around his organic lung, if I remember right.

yeah, you can get Season 1 on DVD now, not sure when season 2 will be released, though by sumers end I'm sure

Ok... I saw this on Starwars.com... they had the final episode of the clone wars cartoon up and yes mace windu does basically a force crush on his chest region(the metal plates that obi wan opened up in his duel with grevious) that constricted that region when Grevious was 'kidnapping' palpatine.
